New Year Recipes - Special Green Bean Soup

Ingredients:
1 Onion, finely chopped
500 g Green bean
1 Carrot, chopped
1 teaspoon finely chopped dill
600 ml Beef stock
4 tablespoons Natural yogurt
Salt and freshly ground white pepper to taste

Procedures:

  1. Add the onion, bean, carrot, dill and salt into a pot.
  2. Add the water until it covers the bean. Bring to the boil and simmer slowly for 40 minutes.
  3. Bring the stock to the boil.
  4. Remove the carrot from the water and drain the bean.
  5. Puree the bean in a food processor. Mix it with stock and bring to the boil.
  6. Heat the soup and slowly stir in the yogurt and mix well.
  7. Add pepper and serve warm.
