New Year Recipes - Black Eye Peas Soup

Ingredients:

Soup Base
1 kg Chicken bones
1 Onion, sliced
1 Carrot, sliced
1 Potato, cut into 6
1/2 clove Garlic
1 teaspoon Salt
2 litre Water 

200 g Black eye peas
1 Onion, chopped
1 Carrot, sliced
1 Potato, sliced
2 sticks Celery, sliced
Freshly ground white pepper to taste

Procedures:

  1. Make the soup base. Add the water with chicken bones, onion, carrot, potato, garlic and salt into a pot.
  2. Bring to the boil, reduce to low heat and boil for 2 hours and set aside.
  3. Pour the peas into pressure cooker, add soup base and boil for 20 minutes.
  4. Add the onion, carrot, potato and celery. Bring to the boil and simmer slowly for 20 minutes.
  5. Add pepper and serve warm.
