New Year Recipes - Black Eye Peas Soup Ingredients:
Soup Base 1 kg Chicken bones 1 Onion, sliced 1 Carrot, sliced 1 Potato, cut into 6 1/2 clove Garlic 1 teaspoon Salt 2 litre Water 200 g Black eye peas 1 Onion, chopped 1 Carrot, sliced 1 Potato, sliced 2 sticks Celery, sliced Freshly ground white pepper to taste
Procedures: - Make the soup base. Add the water with chicken bones, onion, carrot, potato, garlic and salt into a pot.
- Bring to the boil, reduce to low heat and boil for 2 hours and set aside.
- Pour the peas into pressure cooker, add soup base and boil for 20 minutes.
- Add the onion, carrot, potato and celery. Bring to the boil and simmer slowly for 20 minutes.
- Add pepper and serve warm.
