Christmas Recipes - Mushroom Rice Ingredients: 2 tablespoons Butter 1 Onion, chopped 4 pips Garlic, chopped 2 cups Rice 10 Button mushrooms, sliced 100 g Chicken fillet, sliced 2 tablespoons finely chopped parsley 1/2 teaspoon dried basil 2 tablespoons Cream of mushroom Freshly ground white pepper to taste 2 1/2 cups Soup base 2 tablespoons Grated cheese Procedures: - Melt the butter in a pot, add the onion and garlic, stir fry for 3 minutes.
- Add the rice, mushrooms, chicken meat, parsley, dried basil, cream of mushroom and pepper, stir fry for 3 minutes.
- Pour the soup base into the pot, bring to the boil, covered and simmer over low heat for 20 minutes, until rice is cooked.
- Stir in the cheese and serve.
