Christmas Recipes - Mushroom Rice

Ingredients:
2 tablespoons Butter
1 Onion, chopped
4 pips Garlic, chopped
2 cups Rice
10 Button mushrooms, sliced
100 g Chicken fillet, sliced
2 tablespoons finely chopped parsley
1/2 teaspoon dried basil
2 tablespoons Cream of mushroom
Freshly ground white pepper to taste
2 1/2 cups Soup base
2 tablespoons Grated cheese 

Procedures:

  1. Melt the butter in a pot, add the onion and garlic, stir fry for 3 minutes.
  2. Add the rice, mushrooms, chicken meat, parsley, dried basil, cream of mushroom and pepper, stir fry for 3 minutes.
  3. Pour the soup base into the pot, bring to the boil, covered and simmer over low heat for 20 minutes, until rice is cooked.
  4. Stir in the cheese and serve.
