Christmas Recipes - Chocolate Creme Brulee

Ingredients:
- 30 cl milk
- 110 g dark chocolate (70 % cocoa), grated
- 20 cl single cream (cold)
- 90 g caster sugar
- 5 egg yolks
- 3 tbsp demerara sugar (or brown sugar)

Procedures:

  1. Pre-heat oven to 265 F (130°C).
  2. Bring the milk to the boil. Pour on the grated chocolate.
  3. Stir well until become smooth mixture. Add the cream.
  4. In a large bowl, beat the egg yolks with the sugar until white and smooth.
  5. Strain the chocolate mixture over the eggs and whisk well.
  6. Strain the mixture so you sure it's smooth (there must be no crumbs).
  7. Ladle into 5 ramekinks and place in a roasting tin.
  8. Pour enough hot water into the tin to come halfway up the sides of the ramekins.
  9. Cook for 45-50 minutes, or until centre is set. Cool and refrigerate until ready to serve.
  10. Just before serving, sprinkle the tops with demerara sugar and caramelize a very hot grill (boiler) or a blowtorch.
