Christmas Recipes - Chocolate Creme Brulee Ingredients: - 30 cl milk - 110 g dark chocolate (70 % cocoa), grated - 20 cl single cream (cold) - 90 g caster sugar - 5 egg yolks - 3 tbsp demerara sugar (or brown sugar) Procedures:
- Pre-heat oven to 265 F (130°C).
- Bring the milk to the boil. Pour on the grated chocolate.
- Stir well until become smooth mixture. Add the cream.
- In a large bowl, beat the egg yolks with the sugar until white and smooth.
- Strain the chocolate mixture over the eggs and whisk well.
- Strain the mixture so you sure it's smooth (there must be no crumbs).
- Ladle into 5 ramekinks and place in a roasting tin.
- Pour enough hot water into the tin to come halfway up the sides of the ramekins.
- Cook for 45-50 minutes, or until centre is set. Cool and refrigerate until ready to serve.
- Just before serving, sprinkle the tops with demerara sugar and caramelize a very hot grill (boiler) or a blowtorch.
