Thanksgiving Recipes - Egg and Fried Potato Sandwiches Ingredients: 10 slices bread 3 Hard boiled eggs, mashed 2 tablespoons Margarine Freshly ground black pepper to taste 1 Potato, thin sliced 1 Japanese cucumber, sliced Soft cheece or softened butter 1 tablespoon Oil Procedures: - Cut the bread lengthwise and remove the crusts.
- Heat the oil in a frying-pan, stir fry potato until golden brown.
- Mix eggs and margarine in a bowl, add pepper to taste.
- Spread the pieces of bread with soft cheese or butter.
- Spread a layer of eggs mixture on bread.
- Arrange cucumber and potato on bread, cover with another slice of bread.
- Place them on top of each other and cut into half to make triangle shapes.
