Thanksgiving Recipes - Egg and Fried Potato Sandwiches

Ingredients:
10 slices bread
3 Hard boiled eggs, mashed
2 tablespoons Margarine
Freshly ground black pepper to taste
1 Potato, thin sliced
1 Japanese cucumber, sliced
Soft cheece or softened butter
1 tablespoon Oil 

Procedures:

  1. Cut the bread lengthwise and remove the crusts.
  2. Heat the oil in a frying-pan, stir fry potato until golden brown.
  3. Mix eggs and margarine in a bowl, add pepper to taste.
  4. Spread the pieces of bread with soft cheese or butter.
  5. Spread a layer of eggs mixture on bread.
  6. Arrange cucumber and potato on bread, cover with another slice of bread.
  7. Place them on top of each other and cut into half to make triangle shapes.
