Thanksgiving Recipes - Roast Rosemary and Garlic Potatoes Ingredients: 8 Medium potatoes 4 tablespoons Olive oil 2 tablespoons Chopped rosemary 4 Garlic cloves, peeled and sliced Salrt and freshly ground black pepper to taste Procedures: - Put 2 tablespoons of the oil into a roasting tin or ovenproof dish and place in a preheated oven, 230°C, gas mark 8 to warm through.
- Clean the potatoes and drain on kitchen paper.
- Add the remaining oil and the rosemary, mix well and toss the potatoes to coat them evenly.
- Place the potatoes evenly in the roasting tin, then place the tin at the top of the oven.
- Roast the potatoes in the oven for 20 minutes.
- Remove the tin from oven, sprinkle with the garlic.
- Bake for further 5 minutes, make sure the potatoes are cooked evenly.
- Remove the potatoes from the oven, add salt and pepper to taste and serve hot.
