Thanksgiving Recipes - Roast Rosemary and Garlic Potatoes

Ingredients:
8 Medium potatoes
4 tablespoons Olive oil
2 tablespoons Chopped rosemary
4 Garlic cloves, peeled and sliced
Salrt and freshly ground black pepper to taste 

Procedures:

  1. Put 2 tablespoons of the oil into a roasting tin or ovenproof dish and place in a preheated oven, 230°C, gas mark 8 to warm through. 
  2. Clean the potatoes and drain on kitchen paper.
  3. Add the remaining oil and the rosemary, mix well and toss the potatoes to coat them evenly.
  4. Place the potatoes evenly in the roasting tin, then place the tin at the top of the oven.
  5. Roast the potatoes in the oven for 20 minutes.
  6. Remove the tin from oven, sprinkle with the garlic.
  7. Bake for further 5 minutes, make sure the potatoes are cooked evenly.
  8. Remove the potatoes from the oven, add salt and pepper to taste and serve hot.
