New Yesr Recipes - Italian Spinach

Ingredients:
1 kg Spinach
1 tablespoons Olive oil
1 Red onion, sliced
1 Garlic clove, chopped
75 g Pine nuts
4 Tomatoes, sliced
50 g Butter
Pinch of nutmeg
Salt and pepper to taste 

Procedures:

  1. Clean the spinach, drain on kitchen paper and use a towel to press on it gentlely. The spinach must be dry.
  2. Put the pine nuts into a frying-pan and dry-fry over medium heat, stirring constantly until browned and set aside. 
  3. Heat the oil in a saucepan, add the onion and garlic, saute for 5 minutes.
  4. Add the tomatoes, spinach, butter and nutmeg, cook over high heat for 3 minutes.
  5. Add salt and pepper to taste.
  6. Stir in the pine nuts and place the mixture in a serving dish and serve hot.
