Thanksgiving Recipes - Potato Salad Ingredients: 750 g Potatoes 4 Spring onions, finely chopped 2 tablespoons finely chopped chives Salt and pepper to taste Dressing 6 tablespoons Mayonnaise 3 tabelspoons Single cream 1 teaspoon Mustard Procedures: - Put the potatoes in boiling water to cook for 15 minutes.
- Remove the potatoes and put under cold running water, set aside to drain and allow to cool.
- Thickly slice the potatoes and place in a salad bowl.
- Add in spring onions, season with salt and pepper to taste.
- To make the dressing. Add the mayonnaise, cream and mustard, mix well.
- Spoon over the salad and toss lightly to mix.
- Sprinkled with chives and serve.
