Thanksgiving Recipes - Potato Salad

Ingredients:
750 g Potatoes
4 Spring onions, finely chopped
2 tablespoons finely chopped chives
Salt and pepper to taste 

Dressing
6 tablespoons Mayonnaise
3 tabelspoons Single cream
1 teaspoon Mustard 

Procedures:

  1. Put the potatoes in boiling water to cook for 15 minutes.
  2. Remove the potatoes and put under cold running water, set aside to drain and allow to cool.
  3. Thickly slice the potatoes and place in a salad bowl.
  4. Add in spring onions, season with salt and pepper to taste.
  5. To make the dressing. Add the mayonnaise, cream and mustard, mix well.
  6. Spoon over the salad and toss lightly to mix.
  7. Sprinkled with chives and serve.
