Spinach with Lemon Dressing PDF Print E-mail

New Year Recipes - Spinach with Lemon Dressing

Ingredients:
600 g Spinach
2 tablespoons Butter
2 Garlic cloves, finely chopped
4 tablespoons Olive oil
2 tablespoons Lemon juice
Salt and pepper to taste

Procedures:

  1. Heat a saucepan over a medium heat, add in the spinach and 1 tablespoon of water.
  2. Sprinkle salt to taste, then cover and cook for 5 minutes until the spinach has wilted.
  3. Drain the spinach thoroughly.
  4. Pour the spinach in a pan and toss over a high heat until any remaining water is driven off.
  5. Add in the butter and garlic, continue tossing to mix them well.
  6. Place the mixture in a serving dish, then add in olive oil and lemon juice and toss lightly to mix.
  7. Sprinkle with salt and pepper to taste and serve hot.
