Halloween Recipes - Pumpkin in Coconut Milk

Ingredients:
1 medium (700 g) Pumpkin
1 1/2 cups Water
1 large Malacca Sugar/Coconut or Palm Sugar
1 Pandan leaf
1 Cinnamon stick
1/4 teaspoon salt
1 cup Fresh coconut milk

Procedures :

  1. Peel pumpkin, remove seeds and cut into pieces ~5 cm square.
  2. Bring the water to boil, add sugar, pandan leaf, cinnamon stick and salt.
  3. Add pumpkin and cook until tender, ~ 40 minutes.
  4. Check pumpkin by piercing the flesh with a skewer or sharp knife.
  5. Add coconut milk and simmer over low heat to allow the sauce to thicken.
  6. Do not cover with a lid.
  7. Serve hot or warm with glutinous rice.
