New Year Recipes - White Wine Almond Fish Fillet Ingredients: 500 g Fish fillet 2 bowls Almond flakes (for coating)
Marinade 1/2 tablespoon Grapefruit peel 2 tablespoons Grape white wine 1/2 teaspoon Salt 1/2 teaspoon Freshly ground pepper
Sauce 250 ml Grape white wine 2 tablespoons Fresh lemon juice 1 1/2 teaspoons Sugar 1/2 teaspoon Salt 1 teaspoon Tapioca flour Batter 50 ml Water 60 g Plain flour 50 g Rice flour 2 tablespoons Cornstarch 2 Eggs 2 tablespoons Olive oil Procedures: - In a large stockpot or fryer, heat oil to 400°F (200°C).
- Cut the fish fillets into convenient pieces of slices.
- Season with the marinade. Mix well and marinade for 15 minutes.
- Mix well the batter. Dip the fish slices with batter mixture.
- Coat well fish slices with the almond flakes, press lightly.
- Place the fish slices in drain basket.
- Slowly lower basket into hot oil to completely cover fish slices.
- Deep fry and cook the fish slices until golden brown and crispy, ~ 10 minutes.
- Carefully remove basket from oil, and drain fish slices.
- Leave 2 tablespoons oil in the hot pan, pour in sauce mixture and bring to a boil.
- String over a high heat until the gravy is thick.
- Add in the fish slices immediately, stir constantly until well coated and dry.
- Serve hot.
