New Year Recipes - White Wine Almond Fish Fillet

Ingredients:
500 g Fish fillet
2 bowls Almond flakes (for coating)

Marinade
1/2 tablespoon Grapefruit peel
2 tablespoons Grape white wine
1/2 teaspoon Salt
1/2 teaspoon Freshly ground pepper

Sauce
250 ml Grape white wine
2 tablespoons Fresh lemon juice
1 1/2 teaspoons Sugar
1/2 teaspoon Salt
1 teaspoon Tapioca flour

Batter
50 ml Water
60 g Plain flour
50 g Rice flour
2 tablespoons Cornstarch
2 Eggs
2 tablespoons Olive oil 

Procedures: 

  1. In a large stockpot or fryer, heat oil to 400°F (200°C).
  2. Cut the fish fillets into convenient pieces of slices.
  3. Season with the marinade. Mix well and marinade for 15 minutes.
  4. Mix well the batter. Dip the fish slices with batter mixture.
  5. Coat well fish slices with the almond flakes, press lightly.
  6. Place the fish slices in drain basket.
  7. Slowly lower basket into hot oil to completely cover fish slices.
  8. Deep fry and cook the fish slices until golden brown and crispy, ~ 10 minutes.
  9. Carefully remove basket from oil, and drain fish slices.
  10. Leave 2 tablespoons oil in the hot pan, pour in sauce mixture and bring to a boil.
  11. String over a high heat until the gravy is thick.
  12. Add in the fish slices immediately, stir constantly until well coated and dry.
  13. Serve hot.
