Thanksgiving Recipes - Caviar Potatoes

Ingredients:
12 small Potatoes, unpeeled

Filling
5 tablespoons Creme Fraiche or Sour Cream
2 tablespoons Caviar
12 Chives, snipped diagonally 

Procedures:

  1. Cook the potatoes in a pan of boiling salted water for 10 minutes or until tender. 
  2. Drain the potatoes and, when cool enough to handle, slice off both ends so they can stand up.
  3. With a small teaspoon, scoop out a little flesh from the center of each potatoes and carefully fill with creme fraiche or sour cream.
  4. Top with a little caviar and garnish with a few chives.
  5. You can prepare the potatoes the day before and fill the filling an hour before serving.
