Thanksgiving Recipes - Caviar Potatoes Ingredients: 12 small Potatoes, unpeeled Filling 5 tablespoons Creme Fraiche or Sour Cream 2 tablespoons Caviar 12 Chives, snipped diagonally Procedures: - Cook the potatoes in a pan of boiling salted water for 10 minutes or until tender.
- Drain the potatoes and, when cool enough to handle, slice off both ends so they can stand up.
- With a small teaspoon, scoop out a little flesh from the center of each potatoes and carefully fill with creme fraiche or sour cream.
- Top with a little caviar and garnish with a few chives.
- You can prepare the potatoes the day before and fill the filling an hour before serving.
