Christmas Recipes - Hummus Croustades

Ingredients:
420g can Chickpeas, drained and rinsed
2 tablespoons Olive oil
Squeeze of Lemon juice
12 Pastry shells
12 Cherry tomatoes, marinated

Procedures:

  1. Blend the chickpeas with the oil and lemon juice until smooth.
  2. Season the hummus to taste and then spoon or pipe it into the pastry shells.
  3. Top each filled shell with a cherry tomatoes and arrange on a serving platter.
  4. You won't need all the hummus for pastry shells but the remainder can be serve as a dip with bread sticks or chips.
