New Year Recipes - Chicken Jambalaya

Ingredients:
250 g Chicken, boneless and skinless, cut into ~2 cm chunks
Image200 g Chorizo
12 Prawns
200 g Long grain rice
100 g Celery stalk, chopped
200 g Green peppers, diced
400 g Tomatoes, chopped
1 "Bouquet garni" (thyme, parsley, bay-laurel)
2 cloves of Garlic
1 Onion, finely chopped
Tabasco
1 cc Cayenne pepper
2 tablespoons Olive oil
2 1/3 cups Chicken broth

Procedures:

  1. In a large saucepan, heat the oil over medium heat.
  2. Add onions, celery and peppers.
  3. Cook over low heat for 5 minutes.
  4. Add the garlic and let cook for 2 minutes before adding the chicken and chorizo.
  5. When the chorizo's crispy, take it out.
  6. Add tomatoes, bouquet garni, salt, pepper, cloves and tabasco.
  7. Stir in the rice and chicken broth.
  8. Bring to simmer.
  9. Reduce heat to very low, cook for 25-30 minutes.
  10. 5 minutes to the end, add the chorizo and prawns.
