Christmas Recipes - Lemon Tart Ingredients: Crust 250 g (8 oz) All purpose flour 250 g (8 oz) Iced sugar 125 g (4 oz) Butter 1 Pinch of salt 1 Egg Filling 5 Eggs 250 ml (8 fl oz) Fresh lemon juice 250 g (8 oz) Caster sugar 125 ml ( 4 fl oz) Single cream Topping 150 g Iced sugar 3 Eggs whites Instructions : Crust - Using an electric mixer, mix flour and sugar to combine.
- Add the precut butter and pulse until the pastry comes together.
- Form a ball, put in a plastic bag and refrigerate for an hour.
- Grease an 24 cm wide tart pan (or a circle).
- Roll out the dough and place it into the prepared tart pan.
- Cover with bakingsheet paper on which you put dried beans.
- Cook at 425 F (220°C) for 15-20 minutes.
- Leave to cool on a wire rack.
Filling - Using electric beaters, beat the sugar with eggs.
- Then add the lemon juice, and finally the cream.
- Pour onto the pre baked tart shell and bake for 20 minutes at 356 F (180°C) until filling is set.
- Leave to cool on a wire rack.
Topping - Using electric beaters, beat the egg whites until stiff peaks form.
- Add the sugar and go on beating until firm.
- Transfer into a pastry bag and pipe the meringue over the entire tart.
- Pass under grill a few mns until golden brown.
- Leave to cool before serving.
