Christmas Recipes - Avocado Soup

Ingredients:
2 Avocados
500 ml Chicken stock
200 ml Creme fraiche
4 Lemon slices
80 g Red lumpfish roe
1 tablespoon finely chopped chives
salt and pepper to taste
 

Procedures:

  1. Cut the avocado in half.
  2. Scoop out the flesh.
  3. Puree by rubbing through a wire stainer or in a food processor.
  4. Stir in the stock and creme fraiche.
  5. Add in some salt and pepper.
  6. Divide the soup into soup bowl.
  7. Place a thin slice of lemon on top and a dash of roe.
  8. Sprinkle over a little finely chopped chives.
  9. This soup can be served both warn and cold.
