Christmas Recipes - Avocado Soup Ingredients: 2 Avocados 500 ml Chicken stock 200 ml Creme fraiche 4 Lemon slices 80 g Red lumpfish roe 1 tablespoon finely chopped chives salt and pepper to taste
Procedures: - Cut the avocado in half.
- Scoop out the flesh.
- Puree by rubbing through a wire stainer or in a food processor.
- Stir in the stock and creme fraiche.
- Add in some salt and pepper.
- Divide the soup into soup bowl.
- Place a thin slice of lemon on top and a dash of roe.
- Sprinkle over a little finely chopped chives.
- This soup can be served both warn and cold.
