New Year Recipes - Ice Pancakes

Ingredients:

Pancakes
3 Eggs
150 g Flour
600 ml Milk
2 Teaspoons melted butter
Salt
Butter/oil 

Filling
Ice cream (any flavor)

Sauce
400 g Fresh Strawberries
Icing sugar 

Procedures:

  1. To prepare the sauce, puree the strawberries by rubbing through a wire strainer or in a food processor. 
  2. Add icing sugar to taste.
  3. Keep cold in the refrigerator.
  4. To prepare pancakes, mix pancake ingredients together.
  5. Heat  butter/oil in a frying pan.
  6. Pour in a littlebatter and tilt the pan to spread it.
  7. Cook for 1 minutes on each side, until it turn to golden colour.
  8. Flip the pancakes over with a spatula.
  9. Stack the cooked pancakes on top of each other, interleaved with greaseproof paper.
  10. Keep warm in a low oven.
  11. Serve with a large scoop of ice cream on top of each pancake and fold over the edges to make parcels.
  12. Sprinkle icing sugar over the warm pancakes.
  13. Serve the sauce separately.
