Thanksgiving Recipes - Roast Stuffed Turkey

Ingredients:

1 Whole turkey (3 kg)
1/2 Lemon
50 g Butter
Salt and pepper

Stuffing
1/2 Loaf white bread
50 g Butter
2 Onion, chopped
1/2 Teaspoon celery salt
1/2 Teaspoon dried mixed herbs
1 Clove garlic, crushed
2 Teaspoon sherry
200 ml stock
Freshly ground black pepper

Procedures:

  1. Preheat the oven to 170°C, gas 3. 
  2. Make the stuffing. Remove the crusts and dice the bread.
  3. Melt 25 g butter and brown it.
  4. Dice the giblets.
  5. Melt the remaining butter and fry the giblets and the onion.
  6. Stir in fried bread.
  7. Mix in salt, pepper, herbs, garlic, stock and sherry.
  8. Rub the turkey with the lemon. Season and stuff. Truss securely.
  9. Melt the butter and brush over the turkey.
  10. Bake in the oven for 30 minutes.
  11. Turn it over, baste with the butter and roast for further 30 minutes.
  12. Turn breast upwards, baste with the butter and roast for further 45 minutes.
  13. Test with a metal skewer.
  14. Remove turkey from oven and keep warm.
  15. Serve with turkey gravy.
