New Year Recipes - New Year Jambalaya

Ingredients:
3 tablespoons Olive oil or butter
1 Onion, finely chopped
250 g Rice
600 ml Chicken stock
400 g Can tomatoes
1/4 teaspoon Chili powder
1/4 teaspoon Thyme
1/4 teaspoon oregano
1/2 teaspoon Basil
2 cloves Garlic, crushed
1/2 teaspoon Salt and black peppercorns
60 g Butter
300 g Smoked ham, cut into strips
600 g Roasted chicken, cut into strips
1 Green pepper, cut into strips
300 g Cooked prawns, peeled

Procedures:

  1. Heat the oil or melt the butter in a large saucepan.
  2. Add in onio and then follow by rice. Stir and fry for 2-3 minutes.
  3. Add the stock and tomatoes with the can juice.
  4. Add in garlic, chili, herbs, salt and black peppercorns. 
  5. When boiled, cover and simmer for 20 minutes, until the rice has absorbed the liquid.
  6. Heat the remaining oil or butter, fry the ham and pepper strips.
  7. stir the chicken, ham and peppers into cooked rice.
  8. Add in prawns and serve hot.
