New Year Recipes - New Year Jambalaya Ingredients: 3 tablespoons Olive oil or butter 1 Onion, finely chopped 250 g Rice 600 ml Chicken stock 400 g Can tomatoes 1/4 teaspoon Chili powder 1/4 teaspoon Thyme 1/4 teaspoon oregano 1/2 teaspoon Basil 2 cloves Garlic, crushed 1/2 teaspoon Salt and black peppercorns 60 g Butter 300 g Smoked ham, cut into strips 600 g Roasted chicken, cut into strips 1 Green pepper, cut into strips 300 g Cooked prawns, peeled Procedures: - Heat the oil or melt the butter in a large saucepan.
- Add in onio and then follow by rice. Stir and fry for 2-3 minutes.
- Add the stock and tomatoes with the can juice.
- Add in garlic, chili, herbs, salt and black peppercorns.
- When boiled, cover and simmer for 20 minutes, until the rice has absorbed the liquid.
- Heat the remaining oil or butter, fry the ham and pepper strips.
- stir the chicken, ham and peppers into cooked rice.
- Add in prawns and serve hot.
