New Year Recipes - Baked Potatoes with Pickled Herring

Ingredients:
4 Large potatoes
2 Pickled herring, cut into thin slices
200 ml Sour cream
Chives, finely chopped

Procedures:

  1. Preheat the oven to 220°C, gas 7.
  2. Scrub the potatoes. Prick with a skewer or folk several times so sthat the potatoes do not explode in the oven.
  3. Bake the potatoes directly on the oven shelves or use an ovenproof dish in the lowest part of the oven for 45 minutes.
  4. Remove potatoes. Cut a deep cross into each and press on potatoes with thumb and forefinger so that the potato opens out.
  5. Put 2 tablespoons sour cream on to each potato and arrange a few herring slices on top.
  6. Garnish with finely chopped chives.
