New Year Recipes - Roast Rosemary Pork Ingredients: 2 kg Joint of pork 3 cloves Garlic, sliced 1 tablespoon Rosemary 1 tablespoon Soya sauce Salt and freshly ground black pepper 500 ml Stock Sauce 300 ml Stock 100 ml Wine 200 ml Double cream 4 tablespoons Flour 2 tablespoons Blackcurrant jelly Salt and freshly ground black pepper Procedures: - Preheat the oven to 170°C, gas 3.
- Prepare the meat and rub with salt and pepper.
- Cut several slits in the meat close to the bone and insert the slivers of garlic.
- Sprinkle with rosemary.
- Place the meat on a wire rack over a roasting tin.
- Place the roasting tin in the bottom of the oven and bake for 2 hours.
- Baste the meat several times during the last 30 minutes of cooking with the stock mixed with soya sauce.
- Place the meat on a carving board and cover with foil.
- Make the sauce. Drain the cooking juices from the meat and add in stock.
- Mix the flour with a little of wine and stir in mixture.
- Add the remaining wine and cream and boil for ~5 minutes.
- Add salt, pepper and blackcurrant jelly to taste.
- Carve the meat into slices and place on a serving dish.
- Serve the sauce separately.
- Serve with mashed potatoes or boiled vegetables.
