New Year Recipes - Roast Rosemary Pork

Ingredients:
2 kg Joint of pork
3 cloves Garlic, sliced
1 tablespoon Rosemary
1 tablespoon Soya sauce
Salt and freshly ground black pepper
500 ml Stock

Sauce
300 ml Stock
100 ml Wine
200 ml Double cream
4 tablespoons Flour
2 tablespoons Blackcurrant jelly
Salt and freshly ground black pepper

Procedures:

  1. Preheat the oven to 170°C, gas 3.
  2. Prepare the meat and rub with salt and pepper. 
  3. Cut several slits in the meat close to the bone and insert the slivers of garlic.
  4. Sprinkle with rosemary.
  5. Place the meat on a wire rack over a roasting tin.
  6. Place the roasting tin in the bottom of the oven and bake for 2 hours.
  7. Baste the meat several times during the last 30 minutes of cooking with the stock mixed with soya sauce.
  8. Place the meat on a carving board and cover with foil.
  9. Make the sauce. Drain the cooking juices from the meat and add in stock.
  10. Mix the flour with a little of wine and stir in mixture.
  11. Add the remaining wine and cream and boil for ~5 minutes.
  12. Add salt, pepper and blackcurrant jelly to taste.
  13. Carve the meat into slices and place on a serving dish.
  14. Serve the sauce separately.
  15. Serve with mashed potatoes or boiled vegetables.
