New Year Recipes - Deep Fried Chicken with Sherry

Ingredients:
1 Chicken (1.5 kg), cut into quarters
1 tablespoon Sherry wine
1 tablespoon Ginger juice
1 teaspoon Lemongrass, finely chopped
Salt and freshly ground pepper
1 Egg, beaten
Cornflour 

Procedures: 

  1. In a large stockpot or fryer, heat oil to 400°F (200°C).
  2. Be sure to leave room for the chicken, or the oil will spill over.
  3. Layer a large platter with food-safe paper bags.
  4. Rinse chicken, and thoroughly pat dry with paper towels.
  5. Add in sherry, ginger juice, lemongrass, salt and pepper. Mix well and marinade for 1 hour.
  6. Mix beaten egg with chicken.
  7. Coat chicken with cornflour evenly.
  8. Place the chicken in drain basket.
  9. Slowly lower basket into hot oil to completely cover chicken.
  10. Maintain the temperature of the oil at 350°F (175°C), and cook chicken until golden brown and crispy, ~ 25 minutes.
  11. Carefully remove basket from oil, and drain chicken.
  12. Serve hot.
