New Year Recipes - Lucky Cookies
Ingredients : Makes about 1 1/2 dozen cookies 1 stick (114 g) Butter, softened 1 cup (200 g) Light brown sugar 3 tablespoon Granulated sugar 1/2 teaspoon Baking powder 1/2 teaspoon Baking soda 1 3/4 All-purpose flour 1/2 teaspoon Salt 1 Large egg 2 teaspoon Vanilla powder 1 1/2 teaspoon Instant cappuccino powder 1 1/2 cups Dark Nestle chocolate, chopped Procedures:
- Preheat oven to 300°F/150°C.
- Cream the butter and sugars using an electric mixer on medium speed until fluffy (30 seconds).
- Beat in the egg and vanilla extract for another 30 seconds.
- In a large bowl, sift the dry ingredients and using your fingertips mix with butter.
- Stir in the coffee powder and chocolate chips.
- Make little balls of the dough and dispose them onto a greased cookie sheet, 3 inches apart.
- Gently press down on the dough with your hand.
- Bake for 20 minutes or until nicely browned around the edges.
- Bake a little longer for crispier cookies.
- Leave them to harden a little before taking them off of the baking sheet.
- Keep them in an air tight container up to a few days (if they last that long).
