New Year Recipes - Lucky Cookies

Image Ingredients :
Makes about 1 1/2 dozen cookies
1 stick (114 g) Butter, softened
1 cup (200 g) Light brown sugar
3 tablespoon Granulated sugar
1/2 teaspoon Baking powder
1/2 teaspoon Baking soda
1 3/4 All-purpose flour
1/2 teaspoon Salt
1 Large egg
2 teaspoon Vanilla powder
1 1/2 teaspoon Instant cappuccino powder
1 1/2 cups Dark Nestle chocolate, chopped

Procedures:
  1. Preheat oven to 300°F/150°C.
  2. Cream the butter and sugars using an electric mixer on medium speed until fluffy (30 seconds).
  3. Beat in the egg and vanilla extract for another 30 seconds.
  4. In a large bowl, sift the dry ingredients and using your fingertips mix with butter.
  5. Stir in the coffee powder and chocolate chips.
  6. Make little balls of the dough and dispose them onto a greased cookie sheet, 3 inches apart.
  7. Gently press down on the dough with your hand.
  8. Bake for 20 minutes or until nicely browned around the edges.
  9. Bake a little longer for crispier cookies.
  10. Leave them to harden a little before taking them off of the baking sheet.
  11. Keep them in an air tight container up to a few days (if they last that long).
