Christmas Recipes - Snowy Cheese Cake Ingredients: Dough and Base 150 g Flour 40 g Castor sugar 100 g Butter 40 g Ground almonds 1 tablespoon Vanilla sugar 1/2 teaspoon Salt 1 Egg yolk Filling 500 g Curd cheese 200 g Icing sugar 60 g Flour 200 ml Creme fraiche 1 Lemon, grated rind 3 Eggs Procedures: - Make the dough. Mix flour, castor sugar, butter, almonds, vanilla sugar and salt together, until the mixture resembles fine breadcrumbs.
- Add the egg yolk, mix well and make it into the dough.
- Set aside in the refrigerator for 1 hour.
- Preheat the oven to 200°C, gas 6.
- Roll out the dough and press into cake tin or mould.
- Bake the dough shell for 10 minutes.
- Make the filling. Seperate the egg yolk and egg whites.
- Press the curd cheese through a sieve.
- Mix cheese, sugar, flour, creme fraiche, lemon and egg yolk.
- Beat the egg whites to form stiff peaks and fold them into the mixture.
- Pour the filling into the dough shell.
- Bake for 45 minutes or until the mixture feels firm.
- If the top starts turn to brown before the filling has cooked, cover it with foil.
- Sprinkle the top with a little icing sugar.
- Serve cold with puree of strawberries.
