Christmas Recipes - Snowy Cheese Cake

Ingredients:

Dough and Base
150 g Flour
40 g Castor sugar
100 g Butter
40 g Ground almonds
1 tablespoon Vanilla sugar
1/2 teaspoon Salt
1 Egg yolk

Filling
500 g Curd cheese
200 g Icing sugar
60 g Flour
200 ml Creme fraiche
1 Lemon, grated rind
3 Eggs

Procedures:

  1. Make the dough. Mix flour, castor sugar, butter, almonds, vanilla sugar and salt together, until the mixture resembles fine breadcrumbs.
  2. Add the egg yolk, mix well and make it into the dough.
  3. Set aside in the refrigerator for 1 hour.
  4. Preheat the oven to 200°C, gas 6.
  5. Roll out the dough and press into cake tin or mould.
  6. Bake the dough shell for 10 minutes.
  7. Make the filling. Seperate the egg yolk and egg whites.
  8. Press the curd cheese through a sieve.
  9. Mix cheese, sugar, flour, creme fraiche, lemon and egg yolk.
  10. Beat the egg whites to form stiff peaks and fold them into the mixture.
  11. Pour the filling into the dough shell.
  12. Bake for 45 minutes or until the mixture feels firm.
  13. If the top starts turn to brown before the filling has cooked, cover it with foil.
  14. Sprinkle the top with a little icing sugar.
  15. Serve cold with puree of strawberries.
