New Year Recipes - Apples Ice Cream Ingredients: Ice cream 1 Vanilla pod 6 Egg yolks 250 g Castor sugar 500 ml Milk 250 ml Whipping cream Apples in wine 750 ml Red wine 190 g Castor sugar 1 Cinnamon stick 6 Fresh apples Procedures: - Make the ice cream. Cut the vanilla pod lengthwise and scrape the seeds into a bowl.
- Add egg yolks and castor sugar. Beat until the mixture is light and fluffy.
- Bring the milk to boil.
- Beat in the egg mixture and beating until the mixture has cooled.
- Remove the vanilla pod. Whip the cream and add into the mixture.
- Set aside in the freezer for 4 hours, stirring occasionally.
- Cook the apples. Boil the wine together with the sugar and cinnamon stick for 45 minutes.
- Peel and core the apples. Simmer the apples in the wine for 10 minutes.
- Set aside to cool in the wine. It can be kept in the refrigerator before serving for up to 3 days.
- Scoop the ice cream into a seving bowl. Serve with the apples and the wine sauce.
