New Year Recipes - Apples Ice Cream

Ingredients:

Ice cream
1 Vanilla pod
6 Egg yolks
250 g Castor sugar
500 ml Milk
250 ml Whipping cream

Apples in wine 
750 ml Red wine
190 g Castor sugar
1 Cinnamon stick
6 Fresh apples 

Procedures:

  1. Make the ice cream. Cut the vanilla pod lengthwise and scrape the seeds into a bowl.
  2. Add egg yolks and castor sugar. Beat until the mixture is light and fluffy.
  3. Bring the milk to boil.
  4. Beat in the egg mixture and beating until the mixture has cooled.
  5. Remove the vanilla pod. Whip the cream and add into the mixture.
  6. Set aside in the freezer for 4 hours, stirring occasionally.
  7. Cook the apples. Boil the wine together with the sugar and cinnamon stick for 45 minutes.
  8. Peel and core the apples. Simmer the apples in the wine for 10 minutes.
  9. Set aside to cool in the wine. It can be kept in the refrigerator before serving for up to 3 days.
  10. Scoop the ice cream into a seving bowl. Serve with the apples and the wine sauce.
