Green Peas Soup with Wine |

New Year Recipes - Green Peas Soup with Wine Ingredients: 1 tablespoon Butter 1 Onion, finely chopped 450 g Green peas 1 Carrot, cut into 4 pieces 1/2 teaspoon Thyme Salt to taste 600 ml Beef stock 1 tablespoon Soya sauce 1 teaspoon Lemon juice 100 ml Sherry 2 teaspoon Arrowroot 150 ml Double cream, whipped 400 ml Sparkling dry white wine Procedures: - Melt the butter in a saucepan.
- Saute the onion.
- Add the peas, carrot, thyme and salt.
- Add the water until it covers the peas. Bring to the boil and simmer slowly for 40 minutes.
- Bring the stock to the boil, add 95 ml sherry and soya sauce.
- Remove the carrot from the water and drain the peas.
- Puree the peas in a food processor. Mix it with stock and bring to the boil.
- Add lemon juice and salt to taste.
- Stir the arrowroot into the 5 ml sherry and add to the soup.
- Heat the soup and slowly stir in the whipped cream. Do not mix too well.
- Open the wine and pour into the hot soup. Stir slowly.
- Serve warm.
