Christmas Recipes - Cucumber Soup with Wine Ingredients: 1 tablespoon Butter 1 Onion, finely chopped 1 Cucumber, cut into slices 1 teaspoon Basil 6 tablespoons parsley, chopped Salt and freshly ground black pepper to taste 600 ml Vegetable stock 150 ml Double cream, whipped 300 ml Sparkling dry white wine Cream 1 bunch Radishes, finely chopped 2 cloves Garlic, crushed 100 ml Creme fraiche Procedures: - Melt the butter in a saucepan.
- Add the onion, parsley and basil.
- Pour the stock into the saucepan and add the cucumber. Smimmer slowly for 15 minutes.
- Puree the cucumber in a food processor. Mix it with stock and bring to the boil.
- Add salt and pepper to taste.
- Open the wine and pour into the soup. Stir slowly.
- Serve warm.
- Mix the radishes, garlic and creme fraiche together and serve in seperate plate.
