New Year Recipes - Pickled Meat

Ingredients:
400 g Fillet beef
50 g Salt
40 g Sugar
1 tablespoon Black peppercorns, crushed
1 tablespoon pink peppercorns, crushed
4 cloves Garlic, crushed

Sauce
200 ml Creme fraiche
2 tablespoons French mustard
1 teaspoon finely chopped chives

Procedures:

  1. Mix the salt, sugar pepper and garlic and rub into the meat.
  2. Cover and set aside in the refrigerator for 3 days.
  3. Remove the meat and pat dry.
  4. Cut the meat into thin slices.
  5. Make the sauce. Add all source ingredients and mix well.
  6. Arrange the meat on serving plate and serve with sauce.
