Halloween Recipes - Cobweb Lemon Pie

Ingredients:
Dough
150 g Butter
180 g Flour
2 tablespoons Water

Filling
80 g Castor sugar
80 g Cornflour
1 Lemon
400 ml Water
4 Egg yolks
1 tablespoon Butter

Meringue
4 Egg whites
130 g Castor sugar

Procedures:

  1. Make the dough. Mix the butter and flour until the mixture resembles fine breadcrumbs.
  2. Add the water, mix well and make it into the dough. 
  3. Set aside in the refrigerator for 1 hour.
  4. Apply little butter on a loose-based flan tin.
  5. Roll out the dough and put into an ovenproof pie dish. Prick the base with a fork.
  6. Set aside in the refrigerator for another 30 minutes.
  7. Preheat the oven to 200°C, gas 6.
  8. Bake the dough for 20 minutes and set aside to cool.
  9. Make the filling. Wash the lemon and squeeze the juice.
  10. Grate half of the lemon rind.
  11. Mix the sugar, flour, water and lemon juice. 
  12. Pour the mixture into a pan and simmer for 5 minutes, keep stirring.
  13. Put to low heat and pour the egg yolks and butter into the mixture.
  14. Simmer over very low heat for 3 minutes until thickened and mixed.
  15. Set aside to cool. Add the grated lemon rind into the mixture.
  16. Preheat the oven to 150°C, gas 2.
  17. Make the meringue. Mix the egg whites and sugar, beat until form stiff peaks.
  18. Pour the lemon filling into the pastry case.
  19. Spread the meringue criss-crossing over the top making it look like a cobweb.
  20. Bake for another 5 minutes.
