Halloween Recipes - Cobweb Lemon Pie Ingredients: Dough 150 g Butter 180 g Flour 2 tablespoons Water Filling 80 g Castor sugar 80 g Cornflour 1 Lemon 400 ml Water 4 Egg yolks 1 tablespoon Butter Meringue 4 Egg whites 130 g Castor sugar Procedures: - Make the dough. Mix the butter and flour until the mixture resembles fine breadcrumbs.
- Add the water, mix well and make it into the dough.
- Set aside in the refrigerator for 1 hour.
- Apply little butter on a loose-based flan tin.
- Roll out the dough and put into an ovenproof pie dish. Prick the base with a fork.
- Set aside in the refrigerator for another 30 minutes.
- Preheat the oven to 200°C, gas 6.
- Bake the dough for 20 minutes and set aside to cool.
- Make the filling. Wash the lemon and squeeze the juice.
- Grate half of the lemon rind.
- Mix the sugar, flour, water and lemon juice.
- Pour the mixture into a pan and simmer for 5 minutes, keep stirring.
- Put to low heat and pour the egg yolks and butter into the mixture.
- Simmer over very low heat for 3 minutes until thickened and mixed.
- Set aside to cool. Add the grated lemon rind into the mixture.
- Preheat the oven to 150°C, gas 2.
- Make the meringue. Mix the egg whites and sugar, beat until form stiff peaks.
- Pour the lemon filling into the pastry case.
- Spread the meringue criss-crossing over the top making it look like a cobweb.
- Bake for another 5 minutes.
