Thanksgiving Recipes - Crispy Potato Skins

Ingredients:
3 Potates

Filling
2 tablespoons Margarine
3 slices Bacon, chopped
1 Onion, finely chopped
100g grated Cheese

Sauce
100 ml Sour cream
1 teaspoon Olive oil
1 teaspoon finely chopped parsley
Freshly ground black pepper to taste 

Procedures:

  1. Preheat the oven to 180°C, gas mark 3. 
  2. Scrub the potatoes. Prick with a skewer or folk several times so sthat the potatoes do not explode in the oven.
  3. Bake the potatoes directly on the oven shelves or use an ovenproof dish in the lowest part of the oven for 45 minutes.
  4. Remove potatoes and set aside to cool.
  5. Cut each potato into 8 pieces of wedge, scoop out the flesh leaving thin skin of potatoes.
  6. Melt the margarine in a pan. Brush the potato skins with margarine and put on the ovenproof dish.
  7. Make the filling. Add bacon and onions into the pan to fry for 3 minutes.
  8. Put 1 tablespoon of the filling into each potato skin.
  9. Sprinkle with the cheese.
  10. Bake for further 10 minutes.
  11. Make the sauce. Add sour cream, olive oil, parsley and pepper in a bowl and mix well.
